Compared to many snacks we munch on while watching football, this one is fairly healthy. Of course, you might not agree that something with brown sugar and butter could be healthy, but let’s not nit pick. Don’t let the term fairly healthy discourage you, because we found this snack to be yummy taste wise too! The best part? They are SIMPLE
Ingredients:
- 1 large yam sliced into 1/8 ” thick slices — enough to fill a large jelly roll pan. I use stoneware. So, if you don’t have a piece of stoneware like is pictured, just use a metal jelly roll pan and spray it with non-stick cooking spray.
- 1/4 cup butter, melted or soft enough to brush on the yam slices
- 1/2 cup brown sugar
- 1/8 tsp cinnamon
Peel and slice the yam into 1/8″ slices and place the slices on your large jelly roll pan that has been sprayed with non-stick cooking spray. Brush each yam with butter. Mix cinnamon and brown sugar and sprinkle approximately 1 tsp of the mixture on top of each yam slice.
Bake in preheated 425 degree oven for 20 minutes or until desired crispiness is reached.
Much recommended option: If I would have had large marshmallows, I would have added one to each yam slice toward the end of the baking process until the marshmallow was lightly brown. However, Ted has been on a Rice Krispy Treat making kick and we were fresh out of marshmallows!
